Review and Recipe: Pancakes with Opies’ Luxury Summer Berry Compote

OK, so it’s winter and no doubt most of your minds are tuned into festive foodie fair. But the above pictured Summer Berry Compote poured over ice-cream and pancakes is a must try – I mean look at it! Making sweets and desserts really isn’t my forte, but that doesn’t mean I don’t like eating them! This dessert though is pretty easy to do, as most of it is already prepared (recipe below).

The compote is made by Opies, who I’m a big fan of. Not that long ago I tried their amazing hickory sauces. The compote is one of two recently launched, the other is Gooseberry, and both made from 100% British fruit.

The Luxury Summer Berry Compote is indeed that – luxurious – with ample amounts of strawberries, raspberries, blackberries, redcurrants and blackcurrants in it. I like the bitty texture that the seeds provide in the tangy velvety sauce.

Pancakes with Opies Summer Berry Compote

Serves 3
Prep time 10 minutes
Cook time 10 minutes
Total time 20 minutes
Luxurious Pancakes with Opies Summer Berry Compote.


  • 100g plain flour
  • 1 large free range egg
  • 300ml semi-skimmed milk
  • pinch salt
  • knob butter
  • 3 scoops pure vanilla ice-cream (good quality)
  • 3 tablespoons Opies summer berry compote
  • dusting of icing sugar


Sieve flour into a bowl, add egg and half the milk then whisk until all ingredients have combined.
Add the rest of the milk then set aside and leave to rest for 30 mins.
Add a knob of butter to a frying pan and add 2 tablespoons of the pancake mix.
Tilt the pan so the mixture covers the base and fry gently for a minute on either side. Use a fish slice to turn over or if you're feeling brave flip it.
Repeat process until you've used up the mix - you should get about 6 pancakes.
Serve two pancakes per person with a dollop of ice-cream and 1 tablespoon of Opies Summer Berry Compote. Dust the dessert with icing sugar.
