
Sometimes a meal just needs a little pick-me-up, like when you’ve got leftovers and it just doesn’t cut it the next day (though foods such as curries definitely do). Or you’ve done a big batch of cooking at the weekend that you’ll be eating throughout the week. Either way it can end up being samey and boring.
Well, one option to pimp up your meal could be to use the leftovers to make a completely different one, which would be too much of a faff. The other option is to make this quick and simple Mexican inspired salsa. It doesn’t have to be eaten with Mexican style food. Oh no siree! It goes fantastically well with plainly cooked meats and fish. Just dollop a bit on top and POW! You’ve pimped your meal.
Quick and Easy Chunky Tomato Salsa
A tasty, vibrant, salsa recipe

Ingredients
- 250g fresh ripe tomatoes, deseeded and chopped
- quarter of red onion finely chopped
- handful of chopped coriander
- juice of 1 lime
- 1 tsp tabasco sauce
- 1 tbsp extra virgin olive oil
- pinch of brown sugar
- salt and pepper to taste
Directions
- Step 1 Put all the ingredients into a bowl and mix. Serve straight away or it’ll taste even better if you can wait 30mins for the flavours to mingle.
