Lemon Muffin
Tart, fluffy and bursting with citrus flavours is what these lemon muffins are all about. They’re quick and easy to make and very addictive. Great for breakfast or an afternoon snack.

Tasty, tart, lemon muffin.

Ingredients
- 170g plain flour
- 1 egg
- 1 tablespoon oil
- 1 teaspoon baking powder
- 2 tablespoon Demerara sugar
- zest of a lemon
- cream cheese
- jar of lemon curd
- fresh lemon slices for garnish
Directions
- Step 1 Put all the ingredients apart from the cream cheese and lemon curd into a bowl and stir until combined.
- Step 2 Place 6 muffin cases into a muffin tray. Spoon mixture evenly between each muffin case.
- Step 3 Put muffin tray in oven and bake at gas mark 6 for 20 minutes.
- Step 4 Leave to cool then top with a dollop of cream cheese, lemon curd and lemon slice.
Not much sugar.. might give it a go, for the toddler 🙂
