I couldn’t have picked a finer day to take the plunge into my first ever blog post. Sun, clear skies and heat…in September! All I really fancy eating on days like these are salads, and was desiring a French inspired tuna salad, so I made one.

Salads can be boring, but not this. I’ve added enough complimentary ingredients so that you can mix and match each mouthful and this tuna nicoise recipe is ideal with great flavour combinations.

A classic French salad

Ingredients
  • 1 can tuna
  • 4 baby potatoes
  • 1 egg
  • sprinkle capers
  • 1 tomato
  • 4 anchovy fillets
  • handful black olives (I used normal ones here but Kalamata is better)
  • 1 baby gem lettuce
  • thinly sliced red onion
  • DRESSING INGREDIENTS
  • 1 tablespoon white wine vinegar
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon honey
  • 2 tablespoons extra virgin olive oil
  • salt and pepper to taste
Directions
  • Step 1 Boil the egg and potatoes in salted water. I do this in the same pan – potatoes for 12-15 mins adding the egg for the last 8 mins. Once cooked run cold water over them so it cools quickly and stops the cooking process.
  • Step 2 Whisk dressing ingredients together.
  • Step 3 Slice and chop the veg to your liking and place in a bowl along with the other ingredients. Finally, pour dressing over the salad and mix so that all the flavours mingle together, dish up and tuck in.
